Food Porn Day: Hello Panda cake

Can’t feel my feet! It’s almost like they’re not… well, there. But don’t worry, I’m not turning this into a rant about my sore feet. I’m exhausted so today is food porn day. Did I mention that on days like this, I’ll be posting up photos of food and that’s it and I’ll try not to bore you with repetitive words like feet?

Oh right. Sorry!

Today’s food porn star: Hello Panda cake with strawberry and chocolate layers, and chocolate cream cheese frosting.

Everyone knows Hello Panda, right? Hello Panda is a box of fairly iconic and delicious cookies with chocolate/strawberry/vanilla cream filling and I thought I’d make a cake with a Hello Panda face for a friend’s Japanese-themed birthday. To symbolise the creamy filling, I used a chocolate and strawberry layer cake, sandwiched between chocolate cream cheese frosting.

I wasn’t able to create a perfect recipe, so I’m not including it here. FYI, I used a simple white cake recipe from here. Then I added cocoa and melted dark chocolate for the chocolate layer, and strawberry jam and a tiny drop of red food colouring to the other batter for the strawberry layer. I wish it was more obvious in the photo that it really was a dusty shade of pink. Had I really stuck to the brief, it would have been an off-putting shade of pink so I settled for this instead.

The cream cheese frosting was simply softened cream cheese beaten by hand with icing sugar and cocoa powder. I have no idea what I did wrong but the first time around, my mixer produced a fairly sickening looking grainy chocolate puddle which I quickly flushed down the sink. The next time around, I decided that technology would have no hand in it. Thank goodness this second batch was just as I pictured as I would’ve had to run out to the shops again for another block of cream cheese had it failed again.

The Hello Panda itself is melted dark chocolate that was applied on with toothpicks. As I’ve mentioned earlier, my art skills are non-existent so it’s all thanks to my mom’s precise work that the panda looks fairly identical to the real Panda. We used a rough stencil made from baking paper for the outline, and Mom outlined the rest of his face. Then it was simply ‘colouring in’ with more chocolate. That’s about it!
